It's official; Patch 3.0.2 is going live today. While the servers are down, now is the time to update your mods and plan what talent specs you will choose once the talent points reset. I've spent some time in the last couple weeks researching leveling specs in preparation for Wrath of the Lich King, and I realized that what research I was doing might benefit the blog.
Keep in mind as you go through this list that these are suggestions based on what I've read on the net and what I have tested myself in the beta. I play all classes, but not all of them at end game, so while these specs are suggested, they might not necessarily work for you. These suggestions are more of a general guideline for those needing a jumping off point. If you have some ideas that are better than these, please share. After all, that's what a blog is about: the exchange of ideas about a common subject.

Death Knight
Of the three talent trees, Blood is the most powerful for leveling. The Blood leveling spec focuses on using the 2h Runeblade for massive melee damage, and with Improved Rune Tap this build is extremely self-sufficient. While the Unholy is certainly flashy with all it's plague and summoning power, I have the most fun playing as Blood. Yes, I know you can't roll your Death Knights yet, but it's still good to plan ahead for next month. As a side note, now would be the time to start gathering cloth for your DK's First Aid.
Druid
While the arguement can be made to level Balance, for me the Kitty Leveling Build is still top notch. For the last 8 points I plan to grab Nature's Grasp, Savage Fury and possibly a couple points into Brutal Impact because I just love Pouncing mobs from behind.
Hunter
I love, love, LOVE Beast Mastery. This build is clearly the winner when it comes to leveling, as you have nearly zero downtime and mobs die fast. The exotic pets are just plain fun, and really, isn't what fun the point of it all?
Mage
The Frost leveling spec is the one I have had most experience with in the beta. Most things die before they even have time to reach me, which is downright lovely. It's been a long while since I played as frost, but I must say, I'm enjoying it immensely.
Paladin
If you haven't heard, Retribution is finally viable, and more than that, it's fairly powerful now. I can't honestly remember a time I heard people yelling "Nerf Ret!" like I did at the BlizzCon Class panel, so you know the world is about to end. Until it does, enjoy the power that is Ret my Paladin Brethren.
Priest
Priest leveling is a bit trickier than the others, but it isn't as much a hassle now that we will have the dual specs in Wrath. So while I love me Guardian Spirit, I will stick with Discipline for leveling, and use my second spec for healing 10-mans. Granted, I've never played Discipline before, but Blizzard assured me I can still heal with this spec, and I will test it out myself today.
Shaman
My shaman has been Enhancement since day one, and it's great to know that leveling as Enh is still viable. Feral Spirit is essential if not only for the cool factor, but also for the added DPS a pack of wolves brings to the party. All-in-all, I will be rocking the melee damage and enjoying every second.
Warlock
For leveling the Demon Tactics/Ruin build looks to be the sweetest. The phrase "OP" comes to mind, with Demonic Sacrifice, Soul Link, & a 5% increased chance to crit with Demonic Tactics. The Shadow Bolt spam is simple and effective for taking down mobs on your way to level 80.
Warrior
Two words: Titan's Grip. The Fury Warrior is most definitely the leveling master with the new talents coming out today. Also, there's Titan's Grip. Did I mention Titan's Grip? 'Nuff said.

lol, personally I'm going to go combat with my rogue... but from what I've read Assassination is the way to go
Assassination is only 1% to 2% ahead of Combat Swords, so it really comes down to what gear you already have, and what play you prefer.
I was Sublety for the longest time. Bottom half of the top 10 for 25 man raids on the DPS meters, but I rarely died, and I really enjoyed playing this spec. I was #1 in all 5 man heroics, and could easily finish off bosses if the tank died. Then I switched to Combat Daggers (I already had both badge daggers) after seeing how much DPS I could gain from it, and I instantly jumped to #1 DPS in all raids. However I couldn't pull off as much in 5 mans as I did before, I loved the DPS, but secretly missed being Sublety.
For 3.0.2 I went Assassination for the first time ever, and I am loving it. I had enough badges to pick up the Mutilate off hand dagger, and saw an improvement over the faster combat/sublety off hand dager. Solo PvE, I kill everything with just 2 Mutilates, never even have a chance to use finishers. I haven't had a chance to raid yet, but I am breaking 1000dps unbuffed on the practice dummies. That's as much as I was getting fully buffed against raid bosses, so I can't wait to see what I do in raids.
Mutilate hits for 3k+ (total) on average, and Envenom hits for right around 4k on average with 5 applications of deadly poison and 5 combo points. Plus with Cut to the Chase, you get to keep 100% up time on Slice and Dice, envenom refreshes it. Check out my armory for my gear/spec. Sounds like the full T6 geared Rogues are hitting well over 4000dps, some reaching over 5000dps with a spec nearly identical to mine. It really is a blast to play.
